Ingredients
Yield: 6 to 8 servings
- 1lemon
- ⅓cup extra-virgin olive oil
- Salt and freshly ground black pepper
- 3romaine hearts (about 1 pound), trimmed and torn into bite-size pieces
- 1cup cherry tomatoes, halved
- ¾cup (about 6 ounces) chopped cooked bacon
- ¾cup thinly sliced cucumber
- ½cup crumbled blue cheese or feta
- ¼cup thinly sliced scallions
- 1ripe avocado, pitted, peeled, and sliced
- 2hard-cooked (or jammy) eggs, quartered

Step 1
Prepare the dressing: Zest the lemon into a small bowl, split it, and squeeze the juice into it. Reserved.After whisking in the oil, season with salt and pepper to taste.
Step 2
Toss the romaine with the tomatoes, bacon, cucumber, blue cheese, and scallions in a large mixing bowl. Drizzle in approximately two-thirds of the dressing and toss to coat.

Ingredients
- 50g rice vermicelli noodles· one carrot, peeled
- one avocado, peeled and distant
- ¼ cucumber
- eight rice paper wraps
- eight king prawns, peeled and cooked

- sweet chili sauce to serve
Preparation
STEP 1
